PURPOSE:To prepare tasty noodles, by treating unpolished rice with an aqueous solution of an organic acid, neutralizing it with a carbonate, grinding it to give powder of unpolished rice, blending the powder with wheat flour, followed by making the blend into noodles. CONSTITUTION:Unpolished rice in granular state is directly soaked in an aqueous solution containing an organic acid, e.g., acetic acid, citric acid, etc. in pH 4-5 at 40-60 deg.C for 12-44hr. After being dehydrated, the unpolished rice is soaked in an aqueous solurion of an alkali carbonate, e.g., calcium carbonate, etc. so that it is neutralized. The unpolished rice is ground, lyophilized under vacuum, and made into powder. Powdered unpolished rice may be subjected to the above-mentioned treatment. The powder of unpolished rice is blended with the same amount or more of wheat flour (hard flour), a yam, the white, etc. and made into noodles. |
