<p>Deboning of meat esp. hams and shoulders, includes pressing the meat between a pair of plates. One of the plates includes a cavity shaped to receive the bone and clamp it. The pressure of the plates forces the meat off the bone and discharges it sideways while the bone remains clamped between the plates. Pref. one of the plates is made of an elastically deformable material having a shore hardness of 90 deg. mounted on a rigid backing plate. Pref. the bone-receiving cavity is L- or Z-shaped. Method gives a high yield of meat with no bone splinters.</p> |
