PURPOSE:The core ingredient is made to contain a soluble di- or more valent metal salt previously and the curing of sodium alginate as a coating is effected for the surface of the core ingredient ot give ball of a large diameter. CONSTITUTION:For example, a trace amount of calcium chloride is added to a mixture of carrageenan, gelatin, pectin, colorants and flavors, mixed with water under stirring, then heated to form a homogeneous solution and stood for cooling to give the core ingredient. In the meantime, sodium alginate is dissolved in water and a three-layered orifice is used to inject a small amount of red-colored salad oil into the core ingredient and extrude the ingredient into balls of 8-10mm. diameter. The balls are coated with the coating solution and dropped into the curing solution of calcium chloride to produce artificial fish spawns. |
