PURPOSE:To carry out the saccharifying fermentation of grains, without using the steaming and cooling devices and the energy necessary for the devices, by immersing crushed grains in an alkaline solution to effect the gelatinization and swelling, neutralizing the swollen grain, and subjecting to the saccharifying fermentation. CONSTITUTION:Powdery or grannular grain (e.g. polished rice) or its crushed product (35% of the solution) is immersed in an alkaline solution having a concentration of <=2%, preferably 1.0-0.5% (e.g. NaOH solution) to effect the gelatinization and swelling, neutralized (e.g. with a solution of hydrochloric acid), and mixed with an enzyme, an enzymatic agent or microorganisms (e.g. by adding rice malt and cultured yeast) to carry out the saccharifying fermentation of the grain. Since the fermentation can be carried out without heating or steaming the grain, the steaming and cooling apparatuses and the energy therefor are not necessary. The unrefined sake obtained by the alcoholic fermentation can be used as a raw material of natural vinegar, a seasoning by pressing and filtering, or an alcoholic beverage by distillation. |
