PURPOSE:To prepare boiled and frozen noodles having good surface state and scarcely releasing the suspended matter in the soup during cooking and serving, by submerging fresh noodles forcibly in boiling water, washing the boiled noodles with water, and cooling and freezing the product. CONSTITUTION:Fresh noodles prepared by conventional method, e.g. Chinese noodles, buckwheat noodles, etc. are put in a boiling basket with a lid and boiled by keeping the basket forcibly in boiling water controlled at about 98-100 deg.C. The boiled noodles are washed with water, cooled preliminarily, and frozen. |
