PURPOSE:The oil phase in which polyglycerol polymeric fatty acid ester is dissolved is used to produce an emulsified oil composition containing L-ascorbic acid or its salt with high stability. CONSTITUTION:The aqueous phase containing L-ascorbic acid and/or its salt, e.g., its calcium or sodium salt, and the oil phase containing 2-50, preferably 5-30wt% of polyglycerol polymeric fatty ester obtained from polyglycerol of 2- 5 average polymerization degree and polymeric fatty acid of 3-7 polymerization degree are homogenized so that the both phases are contained by 10- 90% and 90-10%, preferably 40-80% and 60-20% respectively. The content of L-ascorbic acid and/or its salt is adjusted to 2-40, preferably 5-25wt% based on the whole composition. |
