To cultivate fungi, in particular those of the family Stropharia rugosa annulata on a cellulose basis as substrate, conventional, in particular baled, straw is moistened to such an extent that its cellular structure is softened but otherwise essentially unaltered. The substrate which is inoculated with the fungal inoculation material without further pretreatment is kept during the subsequent mycelial growth and the production of protein bodies under the most natural conditions possible until ready for harvest, and intensively supplied with air in this period so as to keep the Co2 concentration in the immediate atmosphere as low as possible. It is preferred to introduce a vegetative resting pause in the initial stage of the mycelial growth by inhibiting, or at least hindering, growth.
