CONSTITUTION:The kneading apparatus 6 is composed of a mixing and stirring vessel 2 containing stirring blades 1 and a lid 5 covering the top of the vessel 2 and furnished with a gas blasting nozzle 3 and an air exhaust nozzle 4. Powdery raw material such as wheat flour, buckwheat flour, etc., water, seasonings, etc. are put in the kneading apparatus, and carbon dioxide gas is introduced through the blasting nozzle 3 under stirring. The air remaining in the tank is exhausted through the exhaust nozzle 4 by this operation, and the pastry can be prepared in an oxygen-free state. Since the food pastry thus obtained has low oxygen content, there is no deterioration with microorganisms and oxidation, etc. |
