The invention relates to a leather-paring appliance consisting of a frame having a horizontal roller, above which an adjustable knife holder with a knife blade is mounted, the leather, with its flesh side facing the knife, being drawn under tension over the roller and thus being split or pared by the blade, characterised in that, during the setting of the working thickness or during the lifting in order to introduce the leather workpiece, the knife holder is maintained in its position relative to the roller, for example parallel, by means of a parallel guide, and in that its position relative to the roller can be adjusted on this parallel guide, as well as in that the receptacle of the knife holder has, beyond its centre of rotation located behind the knife holder, a tail-like extension bearing against an adjusting screw which adjusts the working thickness of the knife above the roller. The parallel or angular position of the knife in relation to the roller can be adjusted by means of a device which engages on the parallel guide and which clamps the head of the knife holder by means of a screw in a slot of the parallel-guide spring, or by means of an adjusting spindle which fixes the position of the knife-holder head relative to the parallel guide. <IMAGE>
