PURPOSE:To make the cross section of a product constant, by smoking a piece of raw beef in a retainer under pressure by heat. CONSTITUTION:A piece of raw beef 9 previously coated with an animal protein is introduced into a retainer 1, and a pressing plate 2 is inserted in the opening side of the retainer 1. A guide plate 4 is then inserted in the retainer 1 with a spring 3 placed therebetween. A handle 5 attached to the guide plate 4 is pressed in the direction of arrow 6 with the force accumulated in the spring 3 to engage an engaging piece 7 mounted on the guide plate 4 with an engaging hole of the retainer 1. The retainer 1 is then introduced into a processing chamber and allowed to stand in heated smoke at 50-80 deg.C for several hours to give a smoked beef molded into a shape similar to the inside form of the retainer 1. |
