PURPOSE:To prolong the freshness preservation period of cephalopods (octopus, cuttlefish, etc.) and to prevent them from browning, by preserving them in a atmosphere of ethanol vapor. CONSTITUTION:Cephalopods before (or during) cadaveric stiffening are put in a hermetical container such as expanded polystyrene foam, etc. having a container with an open top containing ethanol or Japanese paper impregnated with ethanol within it, and preserved in an atmosphere of ethanol vapor (preferably cooled with ice further). The chromatophore of cephalopod containing granules of pigment is elongated flatly by the contraction of the muscular fiber caused by cadaveric stiffening and its whole skin is changed into a dark color. When cephalopods are kept in the condition, the contraction state of the musclular fiber is maintained, to prevent their skin from browning (namely the freshness is kept). |
