摘要 PURPOSE:To kill spores and the spores of molds, and to obtain Kamaboko (boiled fish paste) having improved durability, by washing Kamaboko after boiling by water shower and simultaneously sterilizing it by an underwater germicidal lamp, passing it through an O3 atmosphere so that it is allowed to be cooled and sterilized, followed by subjecting it to sterile packing. CONSTITUTION:Kamaboko filled in the gondola 2 is coiled in the automatic steamer 1, at about 80 deg.C, sent from the outlet 3 to the washing and sterilizing chamber 4, washed by the water shower 5 and simultaneously sterilized by the underwater germicidal lamp 6. Water sterilized by a running water sterilizer is used as water to be used. It is then sent from the bottom inlet 11 of the machine 7 for allowing it to be cooled to the machine, and sterilized by the germicidal lamps 10 at the inlet part 11 and the outlet part 12, and by atomsphere of about 0.2-0.5ppm O3 evolved from the ozonizer 13 set on the ceiling. During these operations, cooling air is introduced from the inlet 8 and exhausted from the outlet 9, and Kamaboko is cooed. The kamaboko 14 is then transferred to a conveyor below the germicidal lamp 15, O3 is decomposed and extinguished by the high-output lamp 17 above a packing device, and packed sterily by the packing machine 16.
