<p>PURPOSE:To utilize a lactic acid solution for charging a rapid brewing yeast culture, by reacting a starch liquefying enzyme and a starch saccharifying enzyme with an aqueous suspension of a saccharified SAKE lee formed as a by-product from a preparing step for a rice saccharified liquor in the SAKE preparing process, and subjecting the resultant hydrolyzate solution to the lactic acid fermentation. CONSTITUTION:A saccharified SAKE lee formed as a by-product from a step for preparing a rice saccharified liquor which has been recently adopted in the SAKE preparing process or an aqueous suspension containing a rice bran, broken rice, SAKE lee or crushed rice is added thereto is prepared. A starch liquefying enzyme and a starch saccharifying enzyme are added to hydrolyze the aqueous suspension, and lactic acid bateria are inoculated therein to carry out the lactic acid fermentation and produce lactic acid. The resultant fermentation liquor is filtered and purified, and the resultant lactic acid solution is used for charging a rapid brewing yeast culture. Thus, the saccharified SAKE lee of almost no value at present can be converted into and used as a valuable lactic acid.</p> |
