The invention relates to fish-processing technology, in particular longitudinal alignment of fish before heading. The aim of the invention is the reduction of fish-flesh losses during heading by means of rotating circular cutters. In this connection, the object consists in aligning fish, which are transported lying flat on their side, in a longitudinal position advantageous for heading in such a manner that the heading cut takes place immediately behind the pectoral fin. This is achieved in that the fish are first longitudinally displaced in the direction of the head and subsequently pushed backwards in the direction of the tail until an outer fish part strikes a stop, the upwardly situated pectoral fin of each fish according to the invention being set upright by approximately 90 DEG and the pectoral fin cartilage, which thus emerges from the fish surface, being used as a limit for the backward movement of the fish.
