PURPOSE:To measure the freshness of the titled food, by bringing a volatile basic nitrogen such an organic amine, etc. which is formed with the reduction in freshness of the titled food into contact with an amine-assimilating bacterium, measuring electrochemically an oxygen amount which is consumed by the bacterium. CONSTITUTION:A measuring device consists of the material 1 for immobilizing an amine-assimilating bacterium, the oxygen electrode A, the dialysis membrane 2 for fixing the material 1 for immobilizing an amine-assimilating bacterium at the tip of the oxygen electrode A, the gas permeable film 3 set on the dialysis membrane 2, etc. The oxygen electrode A is inserted into in an alkali buffer solution in a saturated state of dissolved oxygen. After an electric current value is stabilized, a test solution containing a volatile basic nitrogen such as an organic amine, ammonia, etc. is added to the buffer solution. The volatile basic nitrogen is selectively penetrated to the gas permeable film, and brought into contact with the amine-assimilating bacterium 1 on the fixing material and assimilated. Consequently, oxygen is consumed, the consumed amount is shown by the recorder 8 on the electrode A, and the amount of the volatile basic nitrogen is determined from it. |
