PURPOSE:A low sodium salt substitute that is composed of potassium chloride, a specific natural sweetener and an edible polyfunctional organic acid, thus being free from the bitter taste caused by potassium chloride and the aftertaste by the natural sweetener and food containing the same. CONSTITUTION:The objective salt substitute contains potassium chloride, 0.04- 0.25wt%, based on the potassium chloride, of glycyrhizin, or a corresponding amount of licorice extract and/or steviside or monoglycosyl stevioside or a corresponding amount of stevia extract, and 0.5-3.0wt%, based on the total amount of the above components, of an edible polyfunctional organic acid such as malic acid or citric acid as essential components, further an appropriate amount of sodium chloride wherein the particles or crystals of potasssium chloride are coated with the natural sweetener and the edible organic acid on the surface. The resultant substitute is used by less than 30% to make a food product of low sodium content. |
