摘要 PURPOSE:To prepare pickled radishes with a low salt content and a good keeping quality, by pickling salt pressed radishes in nitrogen gas under a stone as a weight, and seasoning the pickled radishes on shipping. CONSTITUTION:Raw radishes 1 are smeared with 5-10% common salt and pressed under a stone as a weight for 4-5 days. When the pickling water is lifted, the radishes are taken out and washed. The resultant salt pressed radishes 1 are contained in an airtight bag 5 in a tank 2, and nitrogen gas is fed from a pipe 6 to keep the nitrogen concentration in the bag >=98% and pickle the radishes 1 with a stone 4 as a weight. The pickled radishes 1 are taken out at a suitable time, seasoned and shipped.
