A skinning apparatus 10 includes a suspension device 12 and a skinning device 11 suspended by the suspension device for easy manipulation by an operator in removing the skin from the ham area of a hog carcass H which is suspended from an overhead support 13. The skinning device includes a revolvable tooth roller 71 and a blade 79 which cooperate with each other and which are so dimensioned as to progressively remove the skin from both ham areas of the hog carcass H in a single pass. The suspension device 12 permits easy manipulation of the heavy skinning device 11 in following the contours of the ham areas of the suspended hog carcass H during the skinning operation. Control means 127 to 130 on hand grips 124 and 125 of the skinning device 11 control operation of both the skinning and suspension devices.
