PURPOSE:The coating film of scallop is dipped in or brought into contact with a liquid prepared by adding water to KOJI (malt) to remove the black coating film and soften its flesh, thus obtaining a product with good color, luster and surface. CONSTITUTION:A KOJI (a malt) of rice, wheat or soybean is mixed with water or salt solution to form a dispersion. Or it is filtered to remove insoluble materials and form an extract. Then, scallops are dipped in or brought into contact with the dispersion or extract at room or lower temperature. |
