发明名称 METHOD OF MAKING NIMAME (BOILED SWEET BEANS) FROM PEANUTS
摘要 PURPOSE:Immediately after boiled, dried peanuts are washed with water, dipped in aqueous sodium bicarbonate, boiled as they are, dipped in a high-temperature solution of high sugar concentration and boiled in a seasoning solution to make NIMAME (boiled sweet beans) with natural taste and flavor kept. CONSTITUTION:Dried peanuts are boiled, immediately washed with water, dipped in aqueous sodium bicarbonate for about 7-10hr and boiled as they are being dipped. Then, the boiled peanuts are dipped in high-temperature solution of high sugar concentration to effect the first-stage seasoning and flavors and seasonings are appropriately added further, then they are boiled to effect the second-stage seasoning. Peanuts could not be made into a dish, however, this process can give NIMAME (soft-boiled sweet beans) of peanuts with their natural taste and flavor kept.
