PURPOSE:To prepare a fried crisp food having a softer palatable taste of the coating part, by adding an emulsion obtained by emulsifying previously fats and oils into the yellow in oil-in-water type as a part of a raw material for a coating ingredient to it. CONSTITUTION:A coating ingredient is prepared by blending wheat flour and water as main raw materials, and, if necessary, other supplementary raw material such as salt, sugar, eggs, etc. In preparing the coating ingredient, an emulsion obtained by emulsifying previously fats and oils into the yellow in oil-in- water type as a part of a raw material for a coating ingredient is added to it. The coating ingredient thus obtained is fried, and, if necessary, together with an ingredient in the coating, to give a fried crisp food having a softer palatable taste of the coating part. |
