PURPOSE:To obtain a vitamin-enriched food and drink with a slight reduction in the vitaminic content by the processing, by adding a clathrate compound of a vitamin with cyclodextrin to the food and drink. CONSTITUTION:A clathrate compound obtained by reacting a vitamin, optionally any of the three forms of alpha, beta and gamma or a mixture thereof, with cyclodextrin is added to a raw material for a food and drink, preferably a processed food, e.g. fermented soybean, yogurt, lactic beverage, pickles, MISO or soy sauce, heated in the preparing process, and concerned with a microorganism to prepare the processed food. Thus, the vitamin lost during the preparation is slight, and further of course the inactivation during the storage after the preparation is slight. The processed food having improved vitamin enriching effect can be obtained. The clathrate compound may be added after the preparation of course; however, the inclusion in the cyclodextrin renders the vitamin readily soluble in water. Therefore, the clathrate compound can be uniformly mixed in any step. |
