PURPOSE:The second stock is used to extract new dry bonito to prepare a tasty soup stock without increase in the volume. CONSTITUTION:The second stock from the second extraction tank 2 is sent to the first extraction tank 1 and heated up almost until boiling. Then, crushed or shaved dry bonito is added to the stock and heated. When boiling starts, heating is stopped imediately and the dried bonito is separated from the soup as the first stock. Then, a necessary amount of extraction solution containing water and sea-tangle stock is heated in the second extraction tank and the separated dry bonito is added to the boiling second extraction solution. The boiling is continued for a long time, then the extracted dry bonito is separated from the soup, thus giving the second stock. |
