PURPOSE:To prepare the raw material of soy malt having uniform gas transmission resistance, extremely uniform qualities, and high enzymatic activity, by granulating a protein raw material after steaming and boiling treatment. CONSTITUTION:A protein raw material, e.g. steamed and boiled soybeans or defatted soybean having a water-content of 30-70%, is granulated in the form of a cylinder having a diameter of 2-6mm. and a length of about 5-50mm. e.g. by extrusion granulation, preferably immediately after the steaming and boiling treatment. The granules are mixed with a carbohydrate raw material such as wheat, corn, etc. immediately after the granulation or after the cooling of the granules. |
