PURPOSE:To prepare an onion dressing resistant to red discoloration, by using frozen and thawed onion as a raw material. CONSTITUTION:In the preparation of an emulsion-type or separated dressing by the conventional process using onion as a part of the raw material, frozen and thawed onion, e.g. the onion frozen at -30--10 deg.C for about 10 days and then thawed by, e.g. quick thawing or slow thawing, is used as the raw material. |
