PURPOSE:Cereal grains are flattened by compressing between hot rollers to effect conversion into alpha-form starch and flattening, thus producing grain flakes containing alpha-form starch. CONSTITUTION:Cereal grains containing alpha-form starch such as rice, wheat, adlay or corn are washed with water, drained to adjust their water content to 20- 40% and fed between a pair of rollers heated up to 150-200 deg.C and made into flakes of 0.1-0.5mm. thickness by compressing. At the same time, more than 90% of the starch is converted into alpha-form. The resultant flakes are crushed into pieces of less than 20mm., sprayed with a seasoning solution and roasted or subjected to other processing to give a product. The product is used as a food for babies and aged people by adding hot water and, when it is mixed with various kinds of cereals, it is used as a breakfast cereal. |
