PURPOSE:To prepare fish bone powder useful as an excellent calcium source, by treating the head or head and backbone of a walleye pollack with a protease, and powdering the product. CONSTITUTION:The head or the head and the backbone of a walleye pollack is washed repeatedly with warm water under stirring and cut to pieces. Bones are collected from the cut pieces, and treated with a protease in the presence of warm water to decompose the proteins between the bones. The treated bones are exposed to running water, and heated in boiling water to deactivate the enzyme and to remove the residual oils and fats. A white raw material thus obtained is dried and finely pulverized to the size passing through a 90 mesh sieve by conventional method, or heated at high temperature and pressure and kneaded in a mixer to obtain pasty or wet powder. |
