DRYING SYSTEM OF WILD GREENS AND VAGETABLES

The present invention provides a vegetable drying system capable of absorbing moisture containing in vegetables by causing fine physical damage to a vegetable structure by applying hot air. The vegetable drying system of the present invention includes: a preprocessing device for blanching a prepared material; a dipping device dipping the preprocessed material into emulsion wherein cooking oil is mixed into water at a concentration of 0.01-0.08%; and a hot-air processing device formed into a cabinet shape and puffing and draying the dipped material by applying hot air at a temperature of 80-200°C.
