PURPOSE:Fish spawn is covered with a semi-permeable membrane, then salting and dehydration are effected through the membrane. CONSTITUTION:Fish spawn such as salmon roe 1 is covered with a semi-permeable membrane such as a membrane of cellophane, collagen, chitosan, parchment or collodion 2 into a flat pack. Then, the resultant packs are placed in a saturated salt solution to effect salting and dehydration or placed in a moisture absorbent to effect dehydration. |
