PURPOSE:Lean and fat meats are integrated by means of a compression molding machine to make a synthetic meat product with an appearance similar to natural steak meat. CONSTITUTION:Lean meat is salted and minced with a chopper or is finely cut with a high-speed cutter and combined with salt and phosphate salt. Meanwhile, fat meat is minced with a chopper and salted or is minced with a high-speed cutter and combined with vegetable protein, water, salt and other additives to prepare an emulsion. Then, both of processed lean and fat meats 1, 2 are fed from separate inlets and compressed in a mold vertically into an integrated product of a bar with a round or elliptic cross section. |
