PURPOSE:To obtain a highly effective anti-oxidant suitable for preventing oxidation of food or the likek, by a method wherein steam distillation residue of rosemary is extracted with a non-polar solvent and the obtained extract is extracted with an aqueous alkali solution to collect the extracted fraction. CONSTITUTION:An extract obtained by subjecting the residue which is obtained by subjecting an extract obtained by extracting rosemary with a non-polar solvent to steam distillation or the residue obtained by subjecting rosemary to steam distillation to an extracting treatment with a nonpolar solvent is extracted with an aqueous alkaline solution of pH of 10.5 or higher. After the treatment, by collecting the extracted fraction, an antioxidant containing 7beta, 11, 12-trihydroxyl-6, 20-epoxymethanoabieta-8, 11, 13-trien-20-one shown by the formula is obtained. As the aqueous alkali solution used in the extracting treatment, one prepared by dissolving an alkali metal hydroxide such as sodium hydroxide or potassium hydroxide or an alkaline earth metal hydroxide or the like in water is used. The compound shown by the formulas is a novel compound. |
