发明名称 PREPARATION OF INSTANT NOODLE
摘要 PURPOSE:To prepare spirally wound dried flat noodles, by forming noodles in the form of flat noodles, cut at the semi-dried stage, wound to a spiral form having a large central void by the eccentric rotation, and drying and coagulating in a frame. CONSTITUTION:Aged noodles are hooked by a machine diagonally between a pair of rods, and placed in an aging chamber. The span betweedn the rods is expanded gradually according to the progress of aging to extend the noodles as a whole to a desired length. Before the extension, the noodles are rolled in the form of round noodles, flat noodles, etc., and aged. The extended noodles are subjected to the preliminary drying to a water-content of 18-23%. The semi-dried noodles, which are still flexible, are cut to 300-700mm. in length. The cut noodles are divided into the amount of one meal, and spirally wound by the eccentric rotational motion. The wound noodles are placed in a breathable frame having circular, oval or square-shape circumference, and dried on a net to a water-content of <=15%. The spirally wound dried flat noodles thus prepared are packed together with the packs of seasonings and spices.
