PURPOSE:Gelatin is added to beverage containing flavors and sweetenings by less than 0.2wt% to impove its taste. CONSTITUTION:In the production of beverage containing natural flavors and sweetenings such as juice, coffee, black tea, soup, sauce or ices, gelatin is added by less than 0.2wt%, preferably by 0.02-0.07wt%. The addition shows large effect, when alpha-L-aspartyl-L-phenylalanine methyl ester is used as a sweetening. The sweet taste of the product becomes mild and foreign or miscellaneous tastes are reduced, thus original tastes and flavors of the product is improved. |
