Amylase and saccharase are incubated in starch and sucrose solutions, respectively, and the reaction mixture is treated with dinitrosalicylic acid and the colour produced evaluated. Maltase is incubated with p-nitrophenyl -α-D-glucopyranoside in solution and the amount of p-nitrophenolute in the reaction mixture is determined photometrically. The tests are used to ascertain the inhibiting effect of the micro-biologically produced, glycosidehydrolase inhibitors described and claimed.
