A sausage making machine uses a long tube of synthetic material for the sausage skins. The synthetic skin is unwound from a reel and guided by rollers through a water bath. The skin then passes between rollers which form circumferential ridges to give the skin a caterpillar-like appearance. The skin is then pressed over a tube which fills it with sausage meat. Moistening the skins immediately before filling obviates the risk of the growth of harmful bacteria; and incorporating the bath in the machine reduces the size of the installation.
