PURPOSE:To prepare frozen fish paste, by adding potassium chloride and saccharides to fish meat immersed in running water, and grinding and rapidly freezing the meat. CONSTITUTION:Fist meat containing a large amount of water is prepared by separating the meat from a fish body and immersing in running water. The meat is added with 1-5% potassium chloride and 5-15% saccharides and ground to obtain viscous meat paste, which is packed in a container and frozen quickly. |
