A heat exchanger is provided with devices for regulating the supply of heat for heating up mash or wort. This heat exchanger takes the form of a double-pipe heat exchanger (1) with a plurality of straight heating pipes connected by curved pipes (5), to which inlet and outlet valves (9, 10) for the heating medium are assigned in each case, which valves (9, 10) can be controlled separately. This method makes it possible to heat up mash or wort in a target-related and accurate fashion, in stages if desired. <IMAGE>
