The invention relates to a process for the preparation of fibre-free enzyme-rich dry malt. In the process according to the invention, green malt is ground in a mill and warm air is blown in to dry it at the same time. The fibres and shell material are separated off, giving dry fibre- free enzyme-rich malt that is readily soluble in warm water.
