PURPOSE:To utilize orange fruits as an additive of jam, by preliminarily preserving orange fruits in sugar, thereby preventing the separation of the juice sacs of orange. CONSTITUTION:Sliced orange is blanched and preserved in sugar. The pref. final sugar content of the sliced orange depends upon the sugar content of the papaya jam, e.g. the sugar content of the orange is 55-58 deg. when that of the jam is 55 deg., and it is 65-68 deg. when that of the jam is 65 deg.. The sugared orange slices are added to the papaya jam just before the completion of the boiling, or a definite amount of the sugared orange slices are put directly into each container. |
