PURPOSE:Compounds useful as natural stabilizer, that are prepared by kneading fine crystalline cellulose, a dispersing agnet, a disintegrator in the presence of water under grinding and then drying having suspension, emulsion, frothing and heat stability and a property preventing the formation of cryohydrate and being readily dispersible in water and able to be added in an unlimited amount of food. CONSTITUTION:Three components of 50-90wt% of fine crystalline cellusose and 50-5wt% in total of a dispersing agent and a disintegrator wherein the weight ratio of the dispersion agent to the disintegrator is 1/9-9/1 are kneaded in the presence of water under grinding and dried. The above fine crystalline cellulose is prepared by hydrolyzing cellulose in the presence of an acid or alkali. The dispersing agent is a water-serllable or water-soluble gum that naturally occurs or is prepared through fermentation process. The disintegrator is e,g., soluble starch or hydrolyzed starch. |
