<p>PURPOSE:To obtain a marron glace, having an unheavy sweetness, and capable of easily permeating a saccharide solution into a Japanese chestnut, by using glucose in place of sugar. CONSTITUTION:A Japanese chestnut, ADZUKI bean, DANINAGON MAME (a large-grained variety of the ADZUKI bean), KINTOKI MAME (a large kind of ADZUKI bean), raisin or cherry is made into a marron glace or confection dipped in sugar by using a saccharide solution containing 20-90wt% based on the total sugar content, glucose, and a perfume, alcohol, seasoning, spice, organic acid, emulsifying agent, dairy product, etc.</p> |
