Machine is for rolling, smoothing and finishing dough pieces for making loaves of bread, esp. French stick loaves, croissants, etc. The machine comprises a mobile wheeled frame carrying a flat, motorised conveyor belt. Above the belt is mounted a channeled, rounding and forming plate. The forming plate can be adjustably inclined w.r.t. the upper surface of the belt. The forming plate is made as two separate, spaced lengths which can be adjusted independently of each other. In plan view, the two lengths are set at an angle to each other. The two lengths may both be of channel section and generally similar to each other. Alternatively, one length may be of channel section and the second length in the form of a flat plate. The machine may incorporate a channeled cutting roller upstream of the belt. The cutting roller cuts dough pieces for forming on the belt. Having a rounding and forming plate in two, independently adjustable lengths greatly facilitates the task of the operator in producing a wide variety of forms. The two-part plate provides a greater effective length on a single belt, so that the smoothness of surface can be raised to a higher degree than with a single part plate.
