PURPOSE:To prepare Chinese noodles not using carbonated water, having hardness similar to that of noodles using carbonated water, by using ash powder of eggshell as a part of raw material. CONSTITUTION:In preparing Chinese noodles conventionally, ash powder of eggshell as a part of raw material is used instead of carbonated water, its amount is 0.2-0.3wt% based on flour, and it is added to the raw material before kneading. |
