PURPOSE:To obtain a fructose drink usable as a sweet sour agent, by treating an isomerized sugar with a glucose oxidase and a catalase enzymes, and preparing a solution containing a fructose and gluconic acid. CONSTITUTION:An isomerized sugar containing 80-90wt% fructose is treated with a glucose oxidase and a catalase to give a given fructose/gluconic acid ratio (at a weight ratio of 8-50, preferably 9-20), and most of the glucose is consumed. The enzymic activity is inactivated by heating, and the resultant drink is directly used as the aimed fructose drink. |
