Pastry based on powdered hazelnuts (or other similar dried fruits) includes, as aromatising component, a prod. obtd. by treating grated orange zest with wine alcohol, this prod. being added to the middle of the dough. The powdered nuts are added to the flour at the start of the prepn. and opt. small pieces of preserved fruits are also added. Pref. the pastry is made up as a layered cake on a base of broken pieces of dough, the layers being sepd. by a filling and impregnated with a rum-flavoured syrup. The whole cake is covered with light meringue, then with milk chocolate and finally dusted with cocoa. It can be decorated as required. |
