Apparatus for pasteurisation-sterilisation, deacidification and alkalisation of cocoa juice, comprising an autoclave (A) having a shaft (1), on which are sequentially disposed a dispersion device (B), a double-action screw pump (C) and a stirrer (F). A calorifier (D) is provided in the autoclave (A). A vacuum plant (H), a group of steel cylinders (G) for feeding inert gases and/or mixtures thereof and a metering pump (J) for water or alkali solution and an emptying pump (L), for discharging the cocoa juice after completion of its processing, are assigned to the autoclave (A). All of the treatment procedures are carried out in the interior of the autoclave (A). <IMAGE>
