PURPOSE:To prepare dried noodles, boilable quickly to give boiled noodles having springiness and improved sense of eating, flavor and nutritive value with minimized loss of firmness thereof, by using wheat flour, common salt and skimmilk powder as raw materials. CONSTITUTION:Wheat flour is mixed with common salt and skimmilk powder or cow's milk, and water is then added to knead the mixture. The resultant dough is rolled into a sheet in a noodle preparing machine or multi-stage roll by the conventional method, and the resultant sheet is then processed into noodle strips, which are dried in a transferring continuous drying machine. |
