发明名称 DEODORIZATION OF RAW MATERIAL FOR FOOD WITH BAD SMELL
摘要 PURPOSE:To exhaust a bad smell together with steam, by heating a raw material for food with a bad smell with condensing upto a tolerance concentration while being impregnated with steam under vacuum, evacuating it under high vacuum so that high-temperature water in the raw material is evaporated by itself under vacuum. CONSTITUTION:A raw material for food with a bad smell such as a sea tangle from China, animal meat or fish meat having a strong bad smell is boiled in water, to remove harshness, and heated with condensing upto a tolerance temperature while being impregnated with steam under vacuum. When the temperature is >=100 deg.C, a drain removing valve is opened, the drain is discharged, and the pressure is returned to normal pressure. A container is evacuated to a high vacuum, high-temperature water in the raw material is evaporated by itself under vacuum, and the bad smell components together with steam are exhausted. In the case of animal meat with a low tolerance temperature, impregnation with steam and deodorization through evaporation under vacuum are repeated.
