Continuous process for dissolving milk proteins (A), contg. water-insoluble casein, comprises pumping a stream of (A), water and solubilisers through a closed reaction vessel where shearing forces convert the mixt. to a soln. of 20-70 (27-60) wt.% solids content. Partic. a volumetric pump fitted with a feed screw is used, and shearing forces can be generated solely by friction with fixed surfaces or additionally by a rotating device (agitator or colloid mill) inside the chamber. Pref. the mixt. is solubilised with NH4OH to pH 5-5.3, then during treatment Ca(OH)2 is added to pH at least 6.5. The mixt. is kept at at least 60 (70-80) deg.C, e.g. by direct steam injection. A machine for the process is also claimed. The process allows highly conc. protein solns. to be made from which dry, water-soluble powders of high bulk density (90% of the specific gravity) can be prepd. Alternatively the soln. can be used directly in mfr. of foods, glues, paints or other coating compsns. (pref. with exclusion of air to prevent foaming).
