发明名称 PREPARATION OF FONDANT
摘要 PURPOSE:To readily obtain a smooth fondant having mild and plain sweetness, good gloss as well as excellent preservation quality, by homogeneously blending amorphous or hardly crystallizable saccharide solution with high-purity powdery crystalline maltose. CONSTITUTION:An amorphous or hardly crystallizable saccharide solution, e.g. saccharide solution with a high maltotriose content, saccharide solution with a high maltotetraose content, isomerized saccharide solution, maltitol solution, sorbitol solution, etc., is prepared. The saccharide solution is then homogeneously blended with high-purity powdery crystalline maltose to afford the aimed fondant. Furthermore, the high-purity powdery crystalline maltose is obtained by hydrolyzing starch with an acid or enzyme, purifying the resultant saccharide solution by a chromatography, method for separation with an organic solvent, etc., concentrating the maltose solution by spray drying, etc. beta-Hydrous crystals or anhydrous crystals are preferably used.
